So Good!!

This morning I tried a new recipe from the Barefoot Contessa at Home book. It's called Sunday Morning Oatmeal and it is so good! It calls for whole milk, but I used 1% and a little whole (Thanks to Chloe!). I also didn't have dried cherries so I used Craisins instead. I like oatmeal once in a while, but I could eat this everyday. I never thought of bananas in my oatmeal before, but with the heat they almost melt! Yum!!

Sunday Morning Oatmeal

1 1/2 cups whole milk, plus extra for serving
2 cups water
1 1/2 cups quick-cooking oatmeal
1/2 tsp kosher salt
1 banana, sliced-wait until oatmeal is done so it doesn't brown
1/2 cup dried cherries
1/2 cup golden raisins
pure maple syrup or brown sugar, for serving

Heat the milk and water in a medium saucepan until it starts to simmer. Add the oatmeal and salt, bring to boil, then lower heat and simmer for 4 to 5 minutes, stirring occasionally, until thickened. Off the heat, stir in the bananas, cherries, and raisins. Place the lid on the pot and allow to sit for 2 minutes. Serve hot with maple syrup or brown sugar and extra milk.

Chrissy, I will have to try the oatmeal. It sounds great! I am so glad you have started a blog. I find that it is easier to keep in touch with friends and family.

Hi Chrissy!
I made this oatmeal this morning to give me energy for my last final. You are right, it is YUMMY :) We miss you guys. The kids have spring break next week and we will probably do lots of swimming (Carley's favorite).
